The Cava Regulatory Board gathered yesterday more than 250 restaurant and gastronomy shops owners, sommeliers, bloggers and journalists at the San Juan en S'Escorxador Gastronomy Market in Palma de Mallorca for its Premium Cava Show. The aim of this meeting was to introduce Reserva and Gran Reserva cavas to Balearic prescriptors.
The Premium Cava Show was opened by Pedro Bonet, chairman of the Cava Regulatory Board, as well as Mar Raventós -vice president of the Cava Institute- and Pere Guilera -chairman of PimeCava.
Bonet emphasized the importance of "demythologizing the cava industry" and breaking down clichés about this product. "At this show we are going to talk about the wide variety of cavas and their quality", added Bonet. "Cava is much more than a drink for a toast".
